A healthy vegan butter alternative
Melt coconut oil in a double boiler if needed. Combine all ingredients in tall jug, and stir to combine. Place jug in fridge for about 1 hour, until oils are beginning to harden and are mostly set, but not quite hard yet. (Time may vary depending on fridge). Use an electric egg beater or stick blender and whip for about 1 minute. Oils should froth up and expand like whipped cream, and lighten in colour. Transfer to clean, dry jars and store in fridge.
You can also substitute 1/2 cup of Olive Oil for part of the Hemp Oil.
